Roast Pork Belly Bnh M

Bnh M or Vietnamese sandwich as most people know it, is a classic east-meets-west delicacy.

The French people brought baguette into Vietnam and they cleverly made it their own. Vietnamese baguette is light, airy and has a thinner crust compared to its French cousin. (in fact it is quite similar to those neighbourhood bakeries we find in Singapore!). A typical Bnh m is filled with crunchy tangy pickled daikon, carrots and cilantro. And of course meat! Usually pork-belly, crushed meatballs or Vietnamese sausages. (there are just so many variations! Our Vietnamese friends, do correct us if we are wrong)

Now what if we stuff crispy pork belly in that crispy and airy baguette? Remember the Sio Bak (roasted pork belly) video we posted a year ago? To add some oomph to the siobak, we decided to caramelize it with some oyster sauce.

The final product is a sandwich with a crunch on the outside and the inside (lots of vegetables!) and umami.
