Refried Beans

Famous Mexican recipe made healthy by adding more veggies and making it more fibre rich and nutritious. This healthy version of refried beans is worth a try! Use these beans in recipes like Burritos or serve it with Baked Tortilla Chips .

Preparation Time: 15 minutes Cooking Time: 4 minutes Makes ¾ cup

Ingredients
½ cup soaked and boiled and coarsely mashed rajma (kidney beans)
2 tsp finely chopped garlic (lehsun)
½ cup finely chopped onions
1 cup finely chopped tomatoes
¼ cup finely chopped capsicum
½ tsp chilli powder
1 tsp roasted cumin seeds (jeera) powder
1 tsp oil
Salt to taste

Method
1. Heat the oil in broad non-stick pan, add the garlic and sauté on a medium flame for few seconds.
2. Add the onions and sauté on a medium flame for 1 minute.
3. Add the tomatoes and 2 tbsp water and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
4. Add the capsicum, rajma, chilli powder, cumin seeds powder, salt and 2 tbsp of water, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
5. Use as required.
