Rabri or Rabdi recipeRabri or Rabdi is a classic north indian dessert recipe made with traditional method.This is made with very minimal ingredients but the taste is out of the worldIt is basically a reduced milk flavoured with different flavours . Eid special recipes ,eid recipes , eid specialIngredients:Milk 1litreSugar 30gms Saffron optionalCardamom powder For garnishing we use: almonds and pistachioMethod:1. Boil the milk in aheavy bottom pan .milk should be full fat .2. Once it comes to boil, lower the flame to low medium and cook the milk till it gets reduce to 1/3rd of its original volume.3. After 5 minutes,add sugar and mix it well.4. After 15 minutes add saffron or elaichi powder and again mix it.5. While making rabri you have to stir it continously so that it doesn’t get stick to sides or bottom of the pan.6. After 1 hr you will see that milk gets reduce to 1/3rd of its volume.7. Turn off the flame and let it cool to room temperature and chilled it in refrigerator for 3 -4 hrs.8.
