Queen Of Puddings - Old Cookbook Show
Today on the old cookbook show we're doing a recipe from 'New And exciting Allinson Recipes' an English cookbook that seems to date from the early post world war time period.

Ingredients:
1 ½ ozs. Allinson breadcrumbs
½ pint milk
½ oz. butter
1 ½ ozs. Castor sugar
2 egg yolks
Jam
Ingredients For Meringue:
2 egg whites
2 ozs. castor sugar

1. Warm the milk, butter and sugar, then add the breadcrumbs, cook for a few minutes till they swell - then place aside to cool.
2. Beat the egg yolks and add to the cooled mixture, pour into aa greased pie dish and bake till set, in a moderate oven 350 deg F. or mark 4/5 for approximately ½ hour.
3. Whisk egg whites till stiff, fold in castor sugar.
4. Spread a thick layer of jam on top of the set custard, pile on the meringue, drawing it up in peaks. Sprinkle with a teaspoonful of castor sugar, and return it to the oven for a further 20-30 minutes.
