Potato Bhaji/Aloo Sabzi/Tiffin Potato Sabji | Indian Mom's Kitchen

Potato Bhaji along with hot Pooris is something we all just love to eat. Making Aloo Sabzi at home is so simple. Office goers, School & College students, usually pack this dry Potato Sabji along with Chappatis in Tiffin boxes for lunch. Given below is the Potato Bhaji recipe:

Ingredients:
4 boiled and chopped Potatoes
4-5 Garlic Cloves
1/2 tsp Cumin
1/2 tsp Turmeric powder
3 Green Chillies
1 tsp Mustard seeds
1/4 tsp Asafoetida (Hing)
3 tbsp Oil
Juice of 1 Lemon
Chopped Coriander leaves
A few Curry leaves
Salt to taste

Method:
-- Crush together Green Chillies and Garlic into a coarse paste.
-- In a pan, heat Oil and splutter Mustard seeds along with Cumin, Asafoetida and Curry leaves.
-- Add the prepared Chilli-Garlic paste.
-- Saute till raw smell goes away.
-- Add Turmeric powder, Salt and 2 tbsp Water and mix well.
-- Garnish with lots of Coriander leaves.
-- Enjoy Potato Bhaji along with hot Pooris.
