Fragrant eggplant and pork tied together by the savory, umami flavor of sweet flour sauce.INGREDIENTS (4 servings):-2 eggplants-1/2 egg-170 g pork loin (diced)-2 cloves garlic (minced)-5 ml dark soy sauce-5 ml cooking wine-5ml rice vinegar-2 tsp. sweet flour paste -1 tsp sugar -2 tsp cornstarch-8 tbsp olive oilDIRECTIONS:1. peel and slice eggplants lengthwise2. make thin cuts across the eggplant, careful not the slice all the way through3. drizzle 1 tbsp of oil evenly on each piece of eggplant before baking4. bake at 375 degrees F (191 C) for 40 minutes5. combine cooking wine, dark soy sauce, cornstarch, and 1/2 of a whisked egg into the diced pork loin and mix well6. chop your eggplant into smaller pieces when finished baking7. add oil to pan on medium heat8. stir fry the pork first until almost done, then add in the eggplant9. add in sugar and rice vinegar, stir fry briefly10. add in sweet flour sauce and stir fry until it coats everything evenly11. add in minced garlic and stir fry until it's evenly distributed12. serve and enjoy!
