Popular Turkish Vegan Side Dish "akuka"

Easy popular, Turkish side dish with eggplants, potatoes, green peppers and, garlic. Mixed with herbs and olive oil, cooked in the oven. Ready in no time. Great for crowds, when you have no time. You can serve as a side dish or in breakfast as I did in the episode.
Ingredients For Turkish Shakshuka (akuka)
3 eggplants
3 potatoes
3 sweet or mild green peppers
2 tomatoes
3-4 cloves of garlic
1 tsp or less each dried basil, oregano
1/2 tsp red pepper flakes, salt
about 4-5 tbsp olive oil
