You might have tried topping bread or even rotis and rolls with pizza sauce, but now here is a totally unique tiffin of rice perked up with all-time favourite pizza sauce, colourful veggies and sweet corn too! Not only is the Pizza Rice delectably tasty, it is easy to prepare in the morning’s bustle and also stays good for over 5 hours. All this makes it a perfect choice to pack in the tiffin box. Preparation Time: 15 minutes.Cooking Time: 13 minutes.Serves 2. For the pizza sauce [makes ½ cup (approx. 7 tbsp)]3 large tomatoes½ tbsp olive oil½ tsp finely chopped garlic (lehsun)¼ cup finely chopped onions½ tsp dried oregano½ tsp dry red chilli flakes 1 tbsp tomato ketchup¼ tsp chilli powderSalt to taste¼ tsp sugarOther ingredients2 cups cooked long grained rice (Basmati)1 tbsp olive oil1 tsp finely chopped garlic (lehsun)½ cup chopped capsicum (red, yellow and green)¼ cup boiled sweet corn kernels (makai ke dane)1 tsp dried oreganoSalt to taste2 tbsp grated processed cheeseFor the pizza sauce1. Make criss-cross on the base of the tomatoes and place them in enough boiling water for 2 to 3 minutes or till the skin begins to peel.2. Drain the tomatoes, cool slightly, peel, deseed and roughly chop them and blend in a mixer to a smooth pulp. Keep aside.3. Heat the olive oil in a broad non-stick pan, add the garlic and sauté on a medium flame for a few seconds.4. Add the onions and sauté on a medium flame for 1 to 2 minutes.5. Add the prepared tomato pulp, oregano, chilli flakes, tomato ketchup, chilli powder and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.6. Add the sugar, mix well and cook on a medium flame for 1 minute, while stirring occasionally. Keep aside.How to proceed1. Heat the olive oil in a broad non-stick pan, add the garlic and sauté on a medium flame for a few seconds.2. Add the capsicum and sauté on a medium flame for 1 minute.3. Add the corn and sauté on a medium flame for 1 more minute.4. Add the prepared pizza sauce, dried oregano and salt, mix well and cook on a medium flame for 1 minute, while stirring occasionally.5. Add the cooked rice, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.How to packAllow it to cool completely, and pack with the cheese sprinkled on top in an air-tight tiffin box, sprinkle cheese evenly over it.
