Pita Pockets
(Kurkure)

Ingredients for Pita Bread:
All-purpose flour 3 cups
Salt 1½ tsp
Yeast 2¼ tsp
Sugar 1 tbsp
Water (lukewarm)
Olive oil 1½ cup

Ingredients for Chicken:
Oil 2-3 tbsp
Chicken strips (boneless) 500g
Garlic Powder 1½ tsp
Onion Powder 1½ tsp
Salt 1 tsp or to taste
Black pepper powder 1 tsp
Lemon Juice 1 tbsp
Carrots (julienne) ½ cup
Red Capsicum (julienne) ½ cup


Ingredients for Filling:
Pita Bread
Prepared Chicken as req
Cucumber (sliced) ¼ cup
Onion (julienne) ½ cup
Lettuce leaves (shredded) ½ cup
Purple Cabbage (shredded) ½ cup
Garlic Mayo as required
Kurkure (Red Chili Jhatka) 1 packet


Directions for Pita Bread Preparation:
1. In a large bowl, whisk together the flour, salt, sugar, and yeast. Add water, olive oil and knead a soft dough. Cover with damp cloth and let it rest until double in size.
2. Take the prepared dough and divide it into 6 equal parts. Make a dough ball of each and roll them down into flat circle.
3. Transfer it onto preheated pan and cook each side until fluffy and golden brown.
4. Take off the pan, cut into half and make it hollow from center like pocket. Your pita pockets are ready.
Directions for Chicken Preparation:
5. In a preheated pan, add oil. Add chicken and cook until it changes color, add salt, black pepper, onion powder, garlic powder, and cook for 2-3 minutes over high flame.
6. Add carrots, capsicum, lemon juice and toss for a minute over high flame. Take off the flame and keep aside.

Directions for Filling Preparation:
7. Now, mix prepared chicken, cucumber, onion, lettuce, cabbage in a bowl and keep aside.
8. Fill in with the prepared filling and garlic mayo sauce in pita pockets, and top with kurkure red chili jhatka.
9. Your Karrak Pita Pockets are ready.

Cooking time: 30 minutes
