What is Tagliatelle or Ribbon Pasta?
Tagliatelle is a traditional type of pasta from the Emilia-Romagna and Marche regions of Italy. Individual pieces of tagliatelle are long, flat ribbons that are similar in shape to fettuccine and are traditionally about 6 mm wide. Tagliatelle can be served with various sauces, though the classic is a meat sauce or Bolognese sauce.

Pink Sauce Pasta
Ingredients:

For Dough:
Maida ()- 1 cup
Water () - cup
Water () - To Boil
Oil () - As Required

For Sauce:
Beetroot, Small () - 1 no
Water () - To Boil
Butter () 1tbsp
Garlic Cloves, Chopped () 1 tbsp
Onion, Chopped () - 4 tbsp
Flour () 1 tbsp
Milk () 300ml or 1cup
Cheese Slices ( ) 4 no
Thyme () - 1 tsp
Oregano () - 1 tsp
Italian Seasoning ( ) 1 tsp
Salt () to taste
Pepper Powder ( ) a pinch
Basil sprig () handful

Tips and Tricks:
-Make sure you make a hard dough, a soft dough will make a very weak pasta that will melt into your sauce.
-Remember that the pasta will double in volume as you boil it, so cut the pasta as small as you can.
- Always boil the pasta in a good volume so the temperature doesn't drop as you put the raw pasta in and there is enough space for the pasta to expand.
-Always cook the beetroot with skin to avoid bleeding its colour.
