Perfect Mutton Biryani in Oven by Spicy Kitchen

This video shows how to make Perfect Mutton Biryani in Oven.

Cook Mutton Biryani for the first 10 minutes at 450° F. THEN change the temperature to 425° F and cook for 20 minutes. Then change down to 400° and cook for 30 min to Dum. Keep your tray in the middle rack in the oven always.

if you see any water in the bottom of the tray after 60 minutes of cook time, you need to dum at 400°F for 10 to 15 min extra time.

1 tsp = 1 teaspoon = 5 grams
1 tbs = 1 tablespoon = 15 grams= 3 tsp.

Here are the Ingredients to make Mutton Biryani in Oven. These measurements are for 5 cups of rice.

Ingredients to marinate Mutton:

Mutton- 1Kg
papaya paste - 1 tbs ( 3 tsp)
Ginger Garlic Paste- 3 tsp
Red Chilli Powder - 2 tsp
Turmeric Powder - 3/4 tsp
Coriander powder - 3 tsp
Cumin powder - 1 tsp
Kasoori methi - 1/2 tsp
Curd - 1/2 to 3/4 cup
Lemon - 1
Oil - 3 to 4 tbs
ghee - 1 tsp

salt - as needed
green cardamom - 6 to 8
black cardamom -2
cloves - 10
cinnamon - 2 inch sticks -2
star anise - 2
mace - 1 to 2
Marati moggu - 3 to 4
shahi jeera - 1 tsp
bay leaves - 4 to 5

Coriander leaves - 1 bunch,
Mint- 1 small bunch
Green chilies - 12

Ingredients to boil biryani rice :

Basmati Rice - 5 Cups
Water - as needed
Green Chilies - 1
Oil - 2 tsp
Salt - 2 tsp or as needed ( water should be taste like seawater)
Cilantro - 2 strings
Cinnamon - 2-inch stick -1
Green Cardamom - 2
Cloves - 4

Other Ingredients:

Ghee - 2 tbs ( 6 tsp)
Fried Onions
leftover hot water from boiled rice - 1/2 cup
Food color water
Biryani Essence/kewra water - 1 tsp
