Peas With Prosciutto And Shallots Recipe - Holiday Side Dish IdeasThis holiday side dish recipe could just as easily be called peas with pancetta, or peas with bacon; there are so many ways to make substitutions. Change the cured meat, change the shallots for onions, leave out the wine, etc.Ingredients:30 mL (2 Tbsp) olive oil85g (3 oz.) prosciutto, roughly chopped2-3 shallots, sliced500g (1 lb.) frozen sweet peasSalt and pepper, to taste2-3 sprigs thyme60 mL (ΒΌ cup) white wineGrated Parmesan or pecorino cheese to serveMethodHeat oil in a 12" braiser over medium heat.
