Peas With Prosciutto And Shallots Recipe - Holiday Side Dish Ideas
This holiday side dish recipe could just as easily be called peas with pancetta, or peas with bacon; there are so many ways to make substitutions. Change the cured meat, change the shallots for onions, leave out the wine, etc.

Ingredients:
30 mL (2 Tbsp) olive oil
85g (3 oz.) prosciutto, roughly chopped
2-3 shallots, sliced
500g (1 lb.) frozen sweet peas
Salt and pepper, to taste
2-3 sprigs thyme
60 mL (ΒΌ cup) white wine
Grated Parmesan or pecorino cheese to serve


Method
Heat oil in a 12" braiser over medium heat.
Add prosciutto and shallots; cook until shallots have softened.
Stir in peas, thyme and wine; season with salt and pepper to taste.
Cover and gently heat until peas are warmed through.
Once plated; grate over some parmesan cheese.

You can sub bacon, ham, or pancetta for the prosciutto.
You can sub any onion (pearl or cipollini) for the shallots.
You can sub water or stock for the wine - just add a touch of vinegar or lemon juice.
