Papaya Relish Sanjeev Kapoor Khazana

A wonderful, rather sweet and a lightly spiced take of raw papaya. Makes for an interesting accompaniment.

PAPAYA RELISH - PLASTIC CHUTNEY

Ingredients

2 cups grated raw papaya
cup sugar
A small pinch of onion seeds (kalonji)
A large pinch of fennel seeds (saunf)
A small pinch of red chilli flakes
A pinch of salt

Method

1. Heat a non-stick pan, add papaya and sugar and mix well. Cook till the mixture turns translucent.
2. Add cup water, mix, cover and cook for 8-10 minutes or till soft.
3. Add onion seeds, fennel seeds, red chilli flakes, salt and mix well. Cook for 1-2 minutes.
4. Take the pan off the heat and allow to cool completely. Store in an air tight container and use as required.
