PANCAKES

Ingredients

1½ cups refined flour
5 tbsps milk powder
¾ cup corn flour
¾ tsp baking powder
¾ cup castor sugar
1 tbsp melted butter + for drizzling
Cold butter cubes to serve
Honey to serve
Fresh fruits to serve

Method

1. Sieve refined flour in a large bowl. Add milk powder, corn starch and baking powder and castor sugar and whisk till well combined.
2. Transfer into an air tight container and store up to 20 days in a dry place.
3. For making one portion, take ½ cup of the prepared pre mix in a bowl, add butter and ¼ cup water and mix well. Rest the batter for 5-10 minutes.
4. Heat a non-stick pan, grease with a little butter using a tissue paper and pour ⅛ cup of the batter and cook on medium heat till the underside is golden brown.
5. Flip the pancake and cook the other side till cooked completely. Serve hot with butter, honey and fresh fruits.
