Pan fried Chicken Tikka | Sanjeev Kapoor Khazana

Chicken pieces marinated with yogurt and spices pan fried to makes these delicious tikkas.

PAN FRIED CHCIKEN TIKKA

Ingredients

500 grams boneless chicken legs, cut into 1 inch pieces
2 tablespoons ginger-garlic paste
1 tablespoon lemon juice
Salt to taste
1 teaspoon red chilli powder
¾ cup hung yogurt
1½ teaspoons garam masala powder
1½ tablespoons Kashmiri red chilli paste
1 teaspoon dried fenugreek leaves (kasuri methi)
½ teaspoon chaat masala
1 tablespoon oil + as required
2-3 tablespoons gram flour (besan)
½ teaspoon carom seeds (ajwain)
1 tablespoon mustard oil

Method

1. Take chicken pieces in a bowl. Add ginger-garlic paste, lemon juice, salt and chilli powder and mix well. Set aside to marinate for 15-20 minutes.
2. Combine yogurt, garam masala powder, chilli paste, dried fenugreek leaves, chaat masala and salt.
3. Heat oil in a non-stick pan. Add gram flour and carom seeds, mix and roast for 5 minutes.
4. Add roasted ingredients to the yogurt and whisk well.
5. Heat mustard oil till smoking point. Add this to the yogurt mixture and mix well. Add the chicken and mix. Refrigerate to marinate for 1-2 hours.
6. Heat some oil in a non-stick pan. Place the marinated chicken in it and cook till the chicken is fully done.
7. Serve hot.

Preparation Time: 1-2 hours
Cooking Time: 8-10 minutes
