OUR FIRST IFTAR An Interesting Menu In One Hour

The first day of Ramadan, we had an easy and delicious menu here in Istanbul, Turkiye. We prepared the iftar in an hour (I begin to make 1,5 hours before the iftar sunset time, but waited to get close to the time so it will be served hot) We had a simple red lentil soup, a well-known recipe for making one of the best liver dish "Arnavut cieri" , Glla (Gullach) dessert and onion sumac salad.

Ingredients for red lentil soup:
1 onion
2 tbsp butter
1 tbsp olive oil
1 tbsp tomato paste
1+1/2 cup red lentils
1-2 cups meat stock (optional)
salt, water
Ingredients for "Arnavut cieri" Albanian style fried liver with potatoes
500gr. beef liver
1/2 cup flour
1/4 tsp baking soda
2 cups or more vegetable oil to deep fry
salt to taste
about 1/4 tsp or more or less paprika, cumin to taste
For the onion sumac parsley salad
half a bunch of fresh parsley
2 red or yellow onion
salt to taste
1-2 tsp sumac
