A classic snack made in Indian style with punch of flavor added by the spicy achar.OPEN ACHARI SANDWICHIngredients8 white bread slices1½ tablespoons methi sambhar for sprinkling¼ medium cabbage, shredded½ cup mixed capsicum strips (red, yellow and green)1 medium raw mango, deseeded and cut into thin strips1 teaspoon red chilli powderSalt to taste 1 tablespoon lemon juice1 tablespoon chopped fresh coriander leaves1 tablespoon oil Butter as required2-3 tablespoons mayonnaise Grated processed cheese as requiredMethodTo prepare vegetable achari mixture, mix together cabbage, mixed capsicum strips, mango strips, 1½ tablespoons methi sambhar, chilli powder, salt, lemon juice and coriander leaves in a bowl. Add oil and mix well. Set aside for 5-10 minutes. Heat a non-stick pan. Trim the edges of the bread slices and halve. Apply some butter on one side of the bread halves, place on the hot pan with butter side down and toast till light golden brown and crisp. Transfer on the worktop.Add mayonnaise to the vegetable achari mixture and mix well. Put some vegetable achari mixture on the toasted side of bread halves and spread some cheese on top.Place the sandwiches in the same non-stick pan, leave some butter on the sides of the sandwiches, cover and toast on low heat for 5 minutes or till the cheese melts.
