NIJIYA Bluefin Tuna Cutting Show, Complete Breakdown - Incredible! | Japanese Eats

This video captures the amazing whole bluefin tuna cutting show at Nijiya Market, up close! Each part of the tuna, including the cheek, collar, eyes, and even meat scraped off the bones (one of the the sources for negitoro), are salvaged and packaged for customers who have put in their orders in advance.

Bluefin tuna from Aomori, one of the leading prefectures of marine products in Japan, costed $60/pound on average. So a typical bluffing tuna weighing 130 pounds would cost $7800 based on this rate.

Kiyoshi Kimura, a businessman who owns the Sushi Zanmai chain of restaurants in Japan, set the record for purchasing the most expensive bluefin tuna ever. According to the New York Times, Kimura paid 155.4 million yen (US $1.76 million) for the 488 pound fish. That's around $3,600 per pound. Kimura also set the same record about a year ago when he paid $736,000 for a 593 pound bluefin.

What's your favorite part of the tuna?
