Learn how to make Navratan Korma - Healthy Nutritious Vegetarian Korma Recipe By Ruchi Bharani On this festive ocassion of Diwali, Chef Ruchi Bharani brings you a very rich, royal and delicious Navratan Korma recipe. This dish is named so as a tribute to the original navratan, that is, nine jewels or the nine courtiers of the Mughal Emperor Akbar. So the dish Navratan Korma is made with nine jewels and these nine jewels can be an assortment of nine veggies or nine garnishing ingredients. Ingredients:1 big onion1/2 cup cashewnut pieces1 piece ginger4-5 green chillis4 tbsp ghee1 tbsp coriander and cumin seeds powder1 tbsp garam masala250 gm cauliflower250 gm carrots250 gm green peas250 gm green beanspaneer cubes1/2 cup pineapple pieces1 tbsp raisins1 tbsp walnut pieces1/2 cup creamcoriander leaves for garnishingpomegranate seeds for garnishingMethod:- Grind the boiled onion, garlic and cashew nuts along with ginger and chillies into a smooth paste.- Heat ghee in a pan. - Once the ghee is hot, add the onion paste and saute it for a minute or two.- Add the coriander and cumin seed powder, garam masala and water and mix the ingredients well. - Add the steamed vegetables - cauliflower, carrots, green peas, green beans, lightly fried paneer cubes, dry fruits like raisins, cashew nuts and walnuts and tint pineapple cubes and mix all the ingredients well.- You may all add few pieces of apple. (optional)- Add little water to the above ingredients and let it boil. - Add salt to taste and coriander leaves and mix well.- Just before getting it off the flame, add the fresh cream and cook it for just about 1 minute.- Garnish with some fresh pomegranate seeds and the delicious Navratan Korma is ready to be served.
