★Nasu-no-Nibitashi★ Japanese Eggplant Side Dish (EP222) | Kitchen Princess Bamboo

Today I want to share with you "Nasu-no-Nibitashi" deep-fried eggplant simmered in Dashi broth.

It is a very popular side dish in the summertime when eggplant is in season.

It's my favorite eggplant side dish of all, and I make it at least once a week and kept in the fridge to have any time of the day.

You can serve cold so you can make ahead as one of your meal prep of the week.

serves 4
〈Nasu-no-Nibitashi〉
5 eggplant (about 1 pound)
oil for frying
・Dashi broth
15g bonito flakes
2 cups water (480ml)
2 1/2 tbs soy sauce (preferably light soy sauce)
3 tbs Mirin
1/2 tbs sugar

〈Nasu-Soumen〉
1 cup leftover Dashi broth
1 bunch Soumen(50g)
