DE-LICIOUS!For more delicious recipes check out our channel @CookingwithNapolinaServes: 4Prep Time: 15 minsCook Time: 60 minsIngredients:3 chicken breasts, cut into chunks4 cloves garlic, finely chopped2 echalion shallots, finely chopped15g fresh basil, chopped, plus more for serving1 tbsp Napolina Extra Virgin Olive Oil2 tbsp Napolina Tomato Puree1 can Napolina Chopped Tomatoes1 tsp smoked paprika1 tsp onion powder1 tsp flakey sea salt1 tsp cracked black pepper1 tsp oregano600ml chicken stock300ml double cream500g Napolina Penne Pasta100g spinach leaves2 tbsp grated parmesan cheese, plus more for servingMethod:1.In a cast iron casserole dish or large frying pan add the olive oil, shallots, garlic, basil, smoked paprika, onion powder, sea salt, black pepper, oregano and tomato puree and sweat for 5 mins at a medium heat.2.Add the chicken and cook for a further 5 mins until the chicken has browned off.3.Add the Napolina Chopped Tomatoes, chicken stock and double cream and spinach and mix well.4.Add the Napolina Penne Pasta and mix together well, ensuring the pasta has mixed entirely with the sauce.5.Sprinkle with parmesan then cover and cook for 45 mins over a medium heat until the pasta has cooked through. (The sauce should be thick and creamy and the pasta should be al dente!)6.Serve immediately with a little more parmesan cheese and fresh basil and enjoy!
