This Mutton malai Leg Roast recipe is extra special with perfectly tender meat and taste. #HappyCookingToYou #FoodFusion #PakolaFullCreamMilk Written Recipe: https://bit.ly/36QdDecVisit Our Website: https://www.foodfusion.com Download iOS & Android app: https://www.foodfusion.com/app Facebook: https://facebook.com/foodfusionpk Instagram: https://instagram.com/foodfusionpk Twitter: https://twitter.com/foodfusionpk Also follow @Healthy Fusion & @Food Fusion Kids for healthy food & kid's special recipes.00:00 Mutton Malai Leg Roast00:21 Prepare marination01:03 Prepare masala 03:12 Aray waahServes 5-6Recipe in English:Ingredients:-Mutton leg preferably front leg (Dasti) 1.5 kg-Kacha papita (Raw papaya) paste 2 tbs-Adrak lehsan paste (Ginger garlic paste) 1 tbs-Namak (Salt) tsp or to taste-Haldi powder (Turmeric powder) tsp-Lemon juice 1-2 tbs-Cooking oil Cup-Hari mirch (Green chillies) sliced 7-8-Lehsan (Garlic) 6-7 cloves -Laung (Cloves) 3-4-Sabut kali mirch (Black peppercorns) tsp-Badi elaichi (Black cardamom) 1-Tez patta (Bay leaves) 2-Pyaz (Onion) grated 1 large-Adrak lehsan paste (Ginger garlic paste) 1 & tbs-Safed mirch powder (White pepper powder) 1 tsp-Zeera (Cumin seeds) roasted & crushed 2 tsp-Kali mirch powder (Black pepper powder) 1 tsp-Namak (Salt) tbs or to taste -Dahi (Yogurt) whisked Cup-Cream Cup-Pakola Full cream Milk 2 Cups-Eaichi powder (Cardamom powder) tsp-Garam masala powder 1 tsp-Lemon slices-Hari mirch (Green chilli) sliced -Hara dhania (Fresh coriander) chopped -Pyaz (Onion) rings-Koyla (Charcoal) for smoke Directions:-Make deep cuts on mutton shoulder with the help of knife & cut the joint.-In a bowl,add mutton shoulder,raw papaya paste,ginger garlic paste,salt,turmeric powder and lemon juice,rub evenly and prick with fork on both sides,cover & marinate for 1 hour (room temperature).-In a wok,add cooking oil,green chillies,garlic & mix well. -Add marinated mutton leg/dasti & cook on medium flame from both sides until golden brown & set aside. -In the same wok,add cloves,black peppercorns,black cardamom,bay leaves & mix well.-Add onion,mix well & cook until golden brown.-Add ginger garlic paste & mix well.-Add white pepper powder,cumin seeds,black pepper powder,salt & mix well.-Add on low flame,add yogurt,mix well & cook until oil separates (2-3 minutes).-Add cream,mix well & cook on low flame for 2-3 minutes.-Add milk & whisk well.-Add cardamom powder,garam masala powder & whisk well.-Add fried mutton leg/dasti & pour gravy,cover & cook on low flame until tender (1 & hour ),rotate & flip in between.-Garnish with lemon slices,green chilli,fresh coriander & onion rings.-Give coal smoke for 2-3 minutes & serve.Recipe in Urdu:Directions:-Dasti per knife ki madad sa deep cuts laga lein & joint mein cut laga lein.-Bowl mein dasti,kacha papita paste,adrak lehsan paste,namak,haldi powder aur lemon juice dal ker evenly rub ker lein aur fork ki madad sa dono sides per prick ker lein,dhak dein aur 1 hour kliya room temperature per marinate ker lein.-Karahi mein cooking oil,hari mirchein aur lehsan dal ker ache tarhan mix karein.-Marinated mutton leg/dasti dal dein aur darmiyani ancch per dono sides sa golden brown hunay tak paka lein & side per rakh dein.-Us he karahi mein laung,sabut kali mirch,badi elaichi aur tez patta dal ker ache tarhan mix karein.-Pyaz dal ker ache tarhan mix karein aur golden brown ho janay tak paka lein.-Adrak lehsan dal ker ache tarhan mix karein.-Safed mirch powder,zeera,kali mirch powder aur namak dal ker ache tarhan mix ker lein.-Halki ancch per dahi dal ker ache tarhan mix karein aur oil alag ho janay tak paka lein (2-3 minutes).-Cream dal ker ache tarhan mix karein aur halki ancch per 2-3 minutes kliya paka lein.-Doodh dal ker ache tarhan whisk ker lein.-Elaichi powder aur garam masala powder dal ker ache tarhan whisk ker lein.-Fried mutton leg/dasti dal ker upper sa gravy dal dein aur dhak ker halki ancch per gul janay tak paka lein (1 & hour) & bech bech mein rotate & flip ker lein.-Lemon slices,hari mirch,hara dhania aur pyaz rings sa garnish ker lein.-2-3 minutes kliya koyla ka dhuwan dein & serve karein!
