Mushroom Soup | Sanjeev Kapoor Khazana

A simple cream of mushroom soup - serve it with some toasted garlic bread to make a delicious meal out of it.

MUSHROOM SOUP - (Serves - 4)

Ingredients

5-6 dried shiitake mushrooms, soaked in warm water for 15 minutes, drained and chopped
8-10 button mushrooms, cut into quarters
1 tablespoon oil
1 tablespoon butter
1 tablespoon chopped garlic
1 medium onion, finely chopped
1 tablespoon refined flour (maida)
2-3 fresh thyme sprigs
Salt to taste
Crushed black peppercorns to taste
2 cups mushroom stock
1 tablespoon fresh cream

Method

1. Heat oil and butter in a deep non-stick pan. Add garlic and sauté for 30 seconds. Add onion and sauté till golden brown.
2. Add flour and sauté for 1 minute. Add shiitake mushrooms and button mushrooms and sauté for 2 minutes. Add fresh thyme leaves and mix well.
3. Add salt and crushed peppercorns, mix and cook for 2-3 minutes. Add mushroom stock and salt, mix and cook for 1-2 minutes. Remove from heat and slightly cool.
4. Blend the mushroom mixture into a smooth mixture and strain in the same pan.
5. Place the pan back on heat and cook for 1-2 minutes. Add crushed peppercorns, mix and cook for 1 minute. Add cream and mix well.
6. Serve hot.
