Moo Shu Chicken (木须肉) | The Chinese Cuisine

This classic Chinese dish is delicious and tasty. You can change the recipe how you want: skipping the chicken to make it vegetarian or perhaps replacing it with, more traditionally, pork!

INGREDIENTS:
- wood ear mushrooms
- 1 mini cucumber
- 4 chicken tenderloins
- salt
- 1/2 tablespoons cornstarch
- 3 whisked eggs
- olive oil (cooking oil)
- chopped green onions
- cooking wine
- 1 tsp. sugar

DIRECTIONS:
1. if you are using dried wood ear mushrooms, soak 1 cup dried in water
2. chop one mini cucumber into thin slices
3. boil/blanch the mushrooms when they're ready
4. chop chicken tenderloins into smaller pieces
5. add salt and cornstarch to chopped chicken tenderloins
6. combine thoroughly and add whisked egg to avoid clumping: mix well
7. add olive oil to a heated pan
8. add in 3 whisked eggs after oil is coating the bottom of the pan
9. scramble the eggs, and add in chopped green onions for flavor
10. take out stir-fried eggs and add in chicken, making sure to add more olive oil if needed
11. when chicken has browned, add in wood ear mushrooms
12. stir-fry while adding in cooking wine and sugar
13. add in previously scrambled eggs, sliced cucumber, 3/4 tablespoons salt, and stir fry everything together for 1-2 more minutes
14. serve and enjoy!
