This traditional Sindhi recipe is a good combination of leafy vegetables with dal which provides plenty of calcium, protein, iron and vitamin A. Relish it with steamed rice or any kind of roti.

Ingredients:
Oil 2 tb
Chopped ginger 1 tb
Chopped garlic 1 tb
Chopped onions 1 c
Chopped green chilly 1 tb
Turmeric hing
Tomato 1 cu
Eggplant ½ c
Bottle gourd ½ c
Lady's finger ½ c
Potatoes ½ c
Chanadal (soak) 2 tb
Spinach 1 big c
Fenugreek leaves 1/4 c
Dill leaves ½ c
Chukkey ke bhaji 1 c
Coriander 1 bun
Salt
Coriander powder 1 tb

METHOD

Take a pan heat oil and add ginger garlic, hing, chopped onions, salt, green chilies , turmeric, add tomatoes, bottle gourd, lady's fingers, eggplant, potatoes, add some chanadal (soaked) add spinach, fenugreek leaves, chukkey ke bhaji, coriander, dill leaves, add salt, water, coriander powder.
Pressure cook (2 whistles) till all this vegetables cooked after cooking mashed these vegetables. And serve it hot.
