Mini Quinoa Jianbing (藜麦煎饼) | The Chinese Cuisine

These jianbing are delicious! They have a chewy texture from the quinoa which contrasts the crunch within!

INGREDIENTS (makes ~8 mini jianbing):
- 1 cup quinoa flakes
- homemade crunchy seaweed crackers
- water
- 2 stalks green onion, chopped
- 1/2 cup tapioca flour
- 3 eggs
- 1 tbsp. spicy paste
- 1 tbsp. sweet flour sauce/broad bean paste with chili
- 1/3 cup all purpose flour

DIRECTIONS:
1. toast 1 cup quinoa flakes over low heat until golden brown
2. combine toasted quinoa flakes, all-purpose flour, tapioca flour
3. add in water until it forms a batter
4. make a flat pancake with the batter on a pan over low-med heat
5. pour on some egg and spread into a thin layer. sprinkle on green onions.
6. flip the jianbing over and smear on sweet flour sauce and broad bean paste with chili
7. add in crunchy crackers of your choice and fold as shown in video
8. serve hot and enjoy!
