MINI PESTO PIZZAIngredients8 mini whole wheat pizza baseGrated mozzarella cheese for spreading1 medium yellow capsicum, finely chopped12-16 cherry tomatoesRed chilli flakes for sprinklingDried oregano for sprinklingPesto 12-15basil leaves1 green chilli1 tablespoon pinenutsSalt to taste¼ teaspoon castor sugar½ teaspoon red chilli flakes1 tablespoon lemon juice1 tablespoon olive oilMethod1. Preheat oven to 180º C.2. To prepare pesto, grind together basil leaves, green chilli, pinenuts, salt, castor sugar, chilli flakes, lemon juice and olive oil to make a smooth paste. Transfer in a bowl.3. Place the pizza base on a baking tray and spread some pesto on them. Spread some mozzarella cheese and put some yellow capsicum on top. 4. Halve cherry tomatoes and place on the base. Sprinkle some chilli flakes and dried oregano.5. Put the tray into the preheated oven and bake for 5-10 minutes.6. Halve and serve hot.
