MINI PESTO PIZZA

Ingredients

8 mini whole wheat pizza base
Grated mozzarella cheese for spreading
1 medium yellow capsicum, finely chopped
12-16 cherry tomatoes
Red chilli flakes for sprinkling
Dried oregano for sprinkling
Pesto
12-15basil leaves
1 green chilli
1 tablespoon pinenuts
Salt to taste
¼ teaspoon castor sugar
½ teaspoon red chilli flakes
1 tablespoon lemon juice
1 tablespoon olive oil

Method

1. Preheat oven to 180º C.
2. To prepare pesto, grind together basil leaves, green chilli, pinenuts, salt, castor sugar, chilli flakes, lemon juice and olive oil to make a smooth paste. Transfer in a bowl.
3. Place the pizza base on a baking tray and spread some pesto on them. Spread some mozzarella cheese and put some yellow capsicum on top.
4. Halve cherry tomatoes and place on the base. Sprinkle some chilli flakes and dried oregano.
5. Put the tray into the preheated oven and bake for 5-10 minutes.
6. Halve and serve hot.
