Boiled noodles baked into the shape of a bowl filled with meatballs coated with spicy sauce.MEATBALLS IN NOODLE NESTIngredients1 cup chicken mince1 cup boiled noodles½ teaspoon red chilli flakesSalt to taste1 tablespoon cornstarch + for dusting2 tablespoons chopped garlic1 inch ginger, finely chopped2-3 fresh red chillies, finely chopped1 tablespoon chopped spring onion greens 2 tablespoons oil + for greasing and deep-frying 1 inch celery, finely chopped1 tablespoon red chilli paste1 tablespoon tomato ketchup½ teaspoon soy sauce Method1. Preheat oven at 180ºC. 2. Take noodles in a bowl. Add chilli flakes, salt and cornstarch and mix well. Add 1 tablespoon oil and mix.3. Divide the noodles into individual silicon muffin moulds and make a small well in the centre in each. Place the moulds on a baking tray, put the tray in the preheated oven and bake for 15-20 minutes.4. Combine chicken mince, 1 tablespoon garlic, ginger, ½ of red chillies and spring onion greens in a bowl and mix well. 5. Heat sufficient oil in a kadai.6. Grease your palms with some oil. Divide the chicken mixture into equal portions and shape them into balls. 7. Spread some cornstarch on a plate. Add salt and mix.8. Dust the balls with cornstarch and deep-fry in hot oil till golden. Drain on absorbent paper.9. Heat 1 tablespoon oil in a non-stick pan. Add remaining garlic, remaining ginger, celery and remaining red chillies and sauté for a minute. Add red chilli paste and sauté for a minute.10. Add tomato ketchup, mix and cook for 30 seconds. Add some water, mix and cook for 30 seconds. Add soy sauce and mix. Add fried meatballs and mix. Add salt, mix and cook for a minute. 11. Remove the silicon muffin moulds from oven, cool and demould.12. Place them on a serving platter and put prepared meatballs in each noodle nests.13.
