Mutton Chops
Serves 5-6
Recipe in English:

Ingredients:
-Kacha papita (Raw papaya) paste 1 & ½ tbs
-Adrak lehsan paste (Ginger garlic paste) 2 tbs
-Lemon juice 1 & ½ tbs
-Sarson ka tel (Mustard oil) 1 tbs
-Mutton chops ½ kg
-Kaju (Cashew nuts) 6-7
-Pyaz (Onion) fried ½ Cup
-Hari mirch (Green chillies) 2-3
-Hara dhania (Fresh coriander) 2 tbs
-Pani (Water) 1-2 tbs
-Nestle milkpak yogurt 1 Cup
-Namak (Salt) 1 tsp or to taste
-Kashmiri lal mirch (Kashmiri red chilli) powder 1 tsp
-Lal mirch (Red chilli) crushed 1 tsp
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Lal mirch (Red chilli) crushed 1 tsp
-Garam masala powder 1 tsp
-Haldee powder (Turmeric powder) ½ tsp
-Dhania powder (Coriander powder) 1 tbs
-Sarson ka tel (Mustard oil) 4-5 tbs
-Sabut kali mirch (Black pepper corns) 1/4 tsp
-Laung (Cloves) 3-4
-Darchini (Cinnamon stick) 1
-Adrak (Ginger) julienne
-Hara dhania (Fresh coriander) chopped
-Pani (Water) ½ Cup or as required
-Adrak (Ginger) julienne
-Hara dhania (Fresh coriander) chopped

Directions:
-In bowl,add raw papaya paste,ginger garlic paste,lemon juice,mustard oil and mix well.
-Add mutton chops,mix well and marinate for 30 minutes.
-In grinder,add cashew nuts and grind to make fine powder.
-Add onion,green chilies,fresh coriander,water and blend to make a paste.
-In bowl,add yogurt,onion & chillies mixture,salt,Kashmiri red chili powder,cumin seeds,red chili crushed, garam masala powder,turmeric powder,coriander powder and mix well.
-In marinated chops,add spiced yogurt,mix well and marinate for 30 minutes.
-In wok,add mustard oil and bring it to smoke point.
-Add black peppercorns,cloves,cinnamon stick and mix.
-Add marinated mutton chops,mix well and cook for 12-15 minutes.
-Cover and cook on low flame for 15-20 minutes.
-Add ginger,fresh coriander and mix well.
-Add water,mix and bring it to boil.
-Cover and cook on low flame for 20-25 minutes or until meat is tender.
-Garnish with ginger,fresh coriander & serve!

Directions:
-Bowl mein kacha papita paste,adrak lehsan paste,lemon juice aur sarson ka tel dal ker ache tarhan mix karein.
-Mutton chops shamil karein aur ache tarhan mix ker ka 30 minutes kliya marinate ker lein.
-Grinder mein kaju dal dein aur grind ker ka fine powder tayyar ker lein.
-Pyaz,hari mirch,hara dhania aur pani dal dein aur blend ker ka paste tayyar ker lein.
-Bowl mein dahi aur onion 7 chillies mixture,namak,Kashmiri lal mirch powder,zeera,lal mirch crushed, garam masala powder,haldee powder aur dhania powder dal ker ache tarhan mix ker lein.
-Marinated chops mein spiced dahi dal ker ache tarhan mix karein aur 30 minutes kliya marinate ker lein.
-Karhai mein sarson ka tel dal dein aur smoke anay dein.
-Sabut kali mirch,laung aur darchini dal ker mix karein.
-Marinated mutton chops dal ker ache tarhan mix karein aur 12-15 minutes kliya paka lein.
-Dhak dein aur halki ancch per 15-20 minutes kliya paka lein.
-Adrak aur hara dhania dal ker ache tarhan mix ker lein.
-Pani dal ker mix karein aur ubal anay dein.
-Dhak dein aur halki ancch per 20-25 minutes ya gosht gul janay tak paka lein.
-Adrak aur hara dhania dal ker serve karein.
