Recipe in English:

Ingredients:
-Boneless mutton kg
-Adrak lehsan paste (Ginger garlic paste) 1 & tbs
-Meat tenderizer tbs
-Namak (Salt) 1 tsp or to taste
-Dahi (Yogurt) thick 4-5 tbs
-Cream 3-4 tbs
-Hari mirch (Green chilli) paste tbs
-Dhania powder (Coriander powder) 1 tsp
-Kali mirch powder (Black pepper powder) 1 tsp
-Baisan (Gram flour) roasted 1 & tbs
-Zeera powder (Cumin powder) 1 tsp
-Safed mirch (White pepper) powder tsp
-Kasuri methi (Dried fenugreek leaves) tsp
-Lemon juice 1 tbs
-Koyla (Charcoal) for smoke
Prepare Creamy Green Chutney:
-Hara dhania (Fresh coriander) Cup
-Podina (Mint leaves) Cup
-Lehsan (Garlic) cloves 2-3
-Hari mirch (Green chillies) 5-6
-Badam (Almonds) 5-6
-Water Cup
-Namak (Salt) tsp or to taste
-Dahi (Yogurt) thick Cup
-Cream Cup
-Lemon juice tbs

Directions:
-In a bowl,add mutton,ginger garlic paste,meat tenderizer,salt & mix well,cover & marinate for 4 hours.
-Add yogurt,cream,green chilli paste,coriander powder,black pepper powder,gram flour,cumin powder,white pepper powder,dried fenugreek leaves,lemon juice & mix well,cover & marinate for 2 hours.
-Thread marinated mutton on wooden skewers (makes 11-12).
-Grease cast iron grill pan with cooking oil & grill marinated skewers on low flame for 2-3 minutes, cover & cook on low flame until done (6-8 minutes) & turn sides in between.
-Give coal smoke for 2 minutes.
Prepare Creamy Green Chutney:
-In a spice mixer,add fresh coriander,mint leaves,garlic,green chillies,almonds,water & blend well.
-Take out in a bowl,add salt,yogurt,cream,lemon juice & whisk well.
-Drizzle prepared creamy green chutney on mutton malai tikka/roast & serve!

Ajza:

-Dahi,cream,hari mirch paste,dhania powder,kali mirch powder,baisan,zeera powder,safed mirch powder,kasuri methi aur lemon juice dal ker ache tarhan mix karein aur dhak ker 2 hours kliya marinate ker lein.
-Marinated mutton ko wooden skewers per laga lein (makes 11-12).
-Cast iron grill pan ko cooking oil sa garam karein aur marinated skewers ko halki ancch per 2-3 minutes kliya grill ker lein aur dhak ker halki ancch per gul janay tak paka lein (6-8 minutes) & bech mein sides change ker lein.
-2 minutes kliya koyla ka dhuwan dein.
Prepare Creamy Green Chutney:
-Spice mixer mein hara dhania,podina,lehsan,hari mirchein,badam aur pani dal ker ache tarhan blend ker lein.
-Bowl mein nikal lein,dahi,cream aur lemon juice dal ker ache tarhan whisk ker lein.
-Mutton malai tikka/roast per tayyar creamy green chutney drizzle ker ka serve karein!
