Malai Methi Chicken | Sanjeev Kapoor Khazana

Chicken pieces cooked in creamy gravy with fresh fenugreek leaves.

MALAI METHI CHICKEN

Ingredients

500 gms boneless chicken, cut into 1 inch cubes
2 tbsps fresh cream
1 tbsp dried fenugreek leaves (kasoori methi)
½ cup finely chopped fresh fenugreek leaves
½ cup beaten yogurt
2 tbsps ginger-garlic-green chilli paste
¼ tsp turmeric powder
Salt to taste
3 tbsps oil
2 medium onions, finely chopped

Method

1. Mix chicken with dried fenugreek leaves, yogurt, ginger-garlic-green chilli paste, turmeric powder and salt in a large bowl and set aside in a refrigerator to marinate for ½ hour.
2. Mix fresh fenugreek leaves with salt and set aside for 10 minutes. Squeeze extra water and set aside in a small bowl.
3. Heat oil in a non-stick pan, add onions and saute till lightly browned. Add fresh fenugreek leaves and saute for 1-2 minutes.
4. Add chicken along with the marinade and mix well. Saute for 3-4 minutes.
5. Add 1 cup water and mix well. Adjust salt, cover and cook till chicken is done.
6. Add cream and mix well.
7. Serve hot with naan or roti.
