Makai ki Roti with Sarson ka saag
Recipe in English:

Ingredients:
Makai ki roti :
-Makai ka aata (Maize flour/Cornmeal) 3 cups
-Namak (Salt) 1 tsp
-Paani (Water) lukewarm as required
-Thick plastic sheets 2
-Desi ghee
Sarsoo ka Saag :
-Paani (Water) 2-3 cups
-Saarso ka saag (Fresh mustard leaves) 1 kg
-Palak (Spanish) 1 bunch
-Bathua saag (Goosefoot) 1 bunch (Optional)
-Taza methi (fenugreek leaves) 1 small bunch
-Lehsan (Garlic) 12-15 cloves
-Hari mirch (Green chili) chopped 8-10
-Namak (Salt) 1 & ½ tsp
-Makkai aata (Maize flour/Cornmeal) 2-3 tbs
For Tarka:
-Oil 1 tbs
-Makhan (Butter) 2-3 tbs
-Lehsan (Garlic) Sliced 1 tbs
-Sabut lal mirch (Button red chilli) 7-8
-Adrak (Ginger) Julienne 2-3 tbs

Directions:
Makai ki roti :
-In bowl,add maize flour,salt and luke warm water (as required) and knead until dough becomes a ball. (Use heel of your hand).
-Divide it into 4 equal small balls.
-Take two plastic zip lock bags, place one dough ball and press it between the plastic sheets.
-Now press the dough ball a little with your palms and flattened it and make a round shaped roti.
-Heat griddle and fry makai ki roti from both sides with desi ghee.
-Makai ki roti is ready.
Sarson ka saag :
-Wash saarso saag, spanish,bathua saag and fresh fenugreek seeds properly and cut them all.
-In pot,add water,saarso saag,spanish,bathua saag,fresh fenugreek seeds,garlic cloves,green chili (chopped) and salt,mix well and bring it to boil.
-Cover and cook on low flame cook for 2-3 hours.
-After cooking, blend the whole mixture with hand blender, add maize flour,stir well and cook until saag thickens,set aside.
-For tarka,in frying pan,heat oil and butter,add garlic,button red chilies and ginger julienne and sauté until light brown.
-Now add this tarka into saarso saag.
-Saarso saag is ready,serve with makai roti.

-Bowl mein,makai ka aata,namak aur neem garam pani dal ker mix karein aur ghond ker dough tayyar ker lein. (Use heel of your hand).
-Dough ko 4 small balls mein divide ker lein.
-Do plastic zip locks bags lein aur bech mein ek dough ball ker k press karein.
-Ab dough ball ko haathon ki madad sa daba ker flat ker lein aur round shaped roti tayyar ker lein.
-Tawa garam karein aur makai ki roti ko desi ghee mein dono sides sa fry ker lein.
-Makai ki roti tayyar hai.
Sarson ka saag :
-Saarso saag,palak,bathua saag aur taza methi ko ache tarhan dho ker cut ker lein.
-Pot mein pani,saarso saag,palak,bathua,taza methi,lehsan,hari mirch (chopped) aur namak dal ker mix karein,aur ubal anay tak paka lein.
-Dhak ker halki ancch per 2-3 hours kliya paka lein.
-Jab pak jaye tou saray mixture ko hand blender ki madad sa blend ker lein aur makai ka atta dal ker ache tarhan bhoon lein aur saag garha hunay tak paka lein,side per rakh dein.
-Tarka kliya,frying pan mein oil aur makhan garam karein,lehsan,sabut lal mirch aur jinger julienne dal ker light brown hunay tak saute ker lein.
-Ab tarka ko saarso saad mein dal dein.
-Saarso saag tayyar hai,Makai ki roti ka saath serve karein.
