Make the Most Delicious Hare Lehsun aur Baingan ka Bharta Sanjeev Kapoor Khazana

Want to a mildly pungent twist to the usual Baingan ka Bharta? Then add Green Garlic to your usual bharta.

HARE LEHSUN AUR BAINGAN KA BHARTA

Ingredients

2 tbsps green garlic bulb, crushed
cup green garlic stalks chopped + for garnish
2 large brinjals (bharta baingan)
3 tbsps oil + for applying
1 tsp cumin seeds
2-3 green chillies, chopped
1 large onion, roughly chopped
1 large tomato, roughly chopped
1 tsp red chilli powder
tsp turmeric powder
1 tsp garam masala powder
Salt to taste
Bhakri for serving

Method

1. Apply oil on the brinjals and roast the brinjal on open flame, till soft and charred. Allow to cool, peel and roughly mash.
2. Heat oil in a nonstick wok, add cumin seeds and once they change colour, add green garlic bulb and green chillies and saut for a minute.
3. Add onion and saut till translucent. Add tomato and saut for 3-4 minutes.
4. Add red chilli powder, turmeric powder, garam masala powder and salt. Cook for 1-2 minutes.
5. Add cooked brinjal and green garlic stalks, mix well and cook for 1-2 minutes.
6. Transfer in a serving bowl, garnish with green garlic stalks and serve hot with bhakri.
