Pumpkin French Toast Recipe

Ingredients:
2 pastured eggs
cup pumpkin
3 Tbsp. plain yogurt
2 - 4 Tbsp. milk, your choice
tsp. Ground cinnamon
Sliced bread cut in half
1 tsp. Vanilla extract
Organic butter
Maple syrup


Directions:
Combine the eggs in a bowl with a wire whisk. Then add the pumpkin, yogurt, cinnamon, and vanilla extract and whisk until well combined.

Preheat a pan over medium low to medium heat. Add about 1 Tbsp. of butter to the pan and spread it around the pan as it melts.

Slice your bread in half and once the pan and butter are hot and slightly bubbly, dip 1 half slice of bread into the egg batter and flip it over to coat both sides of the bread. I like to use a fork for this. I also only leave the bread in the egg mixture for 1 to 2 seconds per side. Dip it in and get it out!

Then place the slice of bread in the hot pan. Continue dipping bread into the egg mixture and placing it in the pan.

Adjust your temperature as it cooks. If you are on medium you may have to turn the heat down a tad.

You cook the French toast about 3 to 4 minutes per side. You are looking for that beautiful golden brown color.

Place your cooked French toast on a warm plate and top with more butter as I did and add a touch of maple syrup. Enjoy!
