Braised Cabbage Recipe - Glen And Friends Cooking

Ingredients:
1 whole - or whatever part of a head of cabbage you have left
Oil for frying
Salt and pepper to taste
5 mL (1 tsp) cumin seeds
Pinch hot pepper flakes
45 mL (3 Tbsp) tomato paste
500 mL (2 cups) chicken or vegetable broth
5 mL (1 tsp) dry mustard

Method:
Preheat oven to 160C (320F.)
Cut cabbage into wedges through the rood end, and season with salt and pepper.
Heat oil in heavy pan, and fry wedges just until they are starting to brown.
Remove to a plate, adjust oil and toast cumin and hot pepper flakes for a few seconds.
Add tomato paste to pan and fry just until sugars start to caramelise.
Stir in broth and dry mustard, then add cabbage back to pan.
Cover and place in the oven to braise for 3-4 hours.
