Mackerel Maze Sushi | Mackerel mixed Sushi & Sudachi Somen | late summer menu (EP293) | Kitchen Princess Bamboo

Today I'm going to be making mackerel maze sushi.

This is a recipe that I call "Mottainai," recipe or "make-over," using a leftover grilled mackerel.

So easy to make and still so delicious and satisfying!

This is a typical summer menu on a Japanese table using flagrant vegetables and seasonings.

Serve with citrusy, refreshing cold Soumen noodles.

2 servings
・Mackerel Maze Sushi
2 rice bowl cooked rice (350~400g)
2 tablespoons Sushi Vinegar
(Sushi Vinegar: 5 tablespoons rice vinegar, 3 tablespoons sugar, 2 teaspoons salt)
50g (more or less) leftover grilled mackerel
20g Myoga ginger ※ optional
10g ginger
3~4 Shiso leaves
1 (20g) Umeboshi
1 tablespoon toasted sesame seeds
・"Sidachi" Somen
1 bunch Somen noodles
2 tablespoons Mentsuyu

1 "Sudachi" Japanese citrus

1cup Dashi
2 tablespoons light soy sauce
1 tablespoon Mirin
※boil and chill
