Macaroni Chaat and Chicken Tenders
Ingredients for Macaroni Chaat:
Macaroni 2 cups
Water as required
Salt (for boiling) to taste
Oil 2 tbsp
Potatoes (boiled) 1 cup
Corn (boiled) 1/2 cup
Capsicum (chopped) 1/2 cup
Onion (chopped) 1/2 cup
Tomatoes (chopped) 1 cup
Green coriander (chopped) 1/2 cup
Lemon juice 4 tbsp
Salt to taste
Black pepper powder 1 tsp
Chaat masala as required
Tamarind sauce 3 tbsp
Red chili flakes 1/2 tbsp
Green chilies (chopped) as required

Butter Milk Preparation:
Milk 1 cup
Lemon Juice 1 tbsp

Ingredients for Chicken Marination:
Butter Milk 1/2 cup
Boneless chicken breast (strips) 500 g
Salt to taste
Black pepper powder 1 tsp
Paprika powder 1 tsp
Red chili powder 1 tsp
Hot sauce 3 tbsp
Chili garlic sauce 1 tbsp
Ginger garlic paste 1 tbsp
Egg 1
Lemon juice 2 tbsp

Ingredients for Coating Mixture:
All-purpose flour 3 cups
Corn starch/flour 3 tbsp
Salt to taste
White pepper powder 1/2 tsp
Black pepper powder 1/2 tsp
Paprika powder 1 tsp
Oregano 1 tsp
Garlic powder 1 tsp
Baking powder 1/2 tsp

Ingredients for Chicken Tender:
Marinated Chicken
Coating mixture
Chilled water
Oil (for frying) as required

Directions Macaroni Chaat Preparation:
1. Bring water to boil in a pot, add salt, oil and macaroni. Boil until 80% done. Strain and set aside to cool down at room temperature.
2. In a large bowl add boiled macaroni, potatoes, onion, tomatoes, coriander, corn, capsicum, lemon juice, salt, black pepper powder, chaat masala, green chilies, red chili flakes, tamarind sauce and mix well. Your macaroni chaat is ready.
Directions for Butter Milk Preparation:
3. In a bowl add Milk, lemon juice and mix well. Let it rest for 15 minutes.
Directions for Chicken Marination Preparation:
4. In a bowl add butter milk, chicken strips, salt, black pepper powder, paprika powder, red chili flakes, hot sauce, chili garlic sauce, ginger garlic paste, egg, lemon juice and marinate for 2 hours or overnight.
Directions for Coating Mixture Preparation:
5. In a bowl add flour, corn starch, salt, white pepper powder, black pepper powder, paprika powder, oregano, garlic powder, baking powder and mix well.
Directions for Chicken Tender Preparation:
6. Take the marinated chicken strips, coat them in coating mixture by pressing with finger gently. Dip them in chilled water and coat them again in coating mixture.
7. Fry them in preheated oil until crispy and fully cooked. Serve with macaroni chaat.

Cooking time: 20 mins
