This time a whisky liqueur ice cream that uses Drambuie and Cointreau.The original Loch Lomond Cocktail recipe appeared in the 1937 Café Royal Cocktail Book and itis Drambuie, Cointreau, and lemon juice. Our testing of the cocktail is in this video: https://youtu.be/5Mf8rCnSMQgIngredients:500 mL (2 cups) 35% whipping cream250 mL (1 cup) 3.25% milk30 mL (2 Tbsp) dry milk powder30 mL (2 Tbsp) Invert sugar (like corn syrup)Pinch of saltZest of 1 lemon60 mL (¼ cup) sugar5 egg yolks45 - 60 mL (3-4 Tbsp) Drambuie30 mL (2 Tbsp) Cointreau10 mL (2 tsp) pure lemon extractMethod:In a medium saucepan whisk together the cream, milk, dry milk powder, corn syrup, salt, and lemon zest.Bring the mixture to just to a scalding temperature. In a medium bowl, whisk together the egg yolks and sugar. Whisking constantly, temper the egg yolks with some of the hot cream. Whisking pour the egg mixture back into the saucepan and cook over medium heat until the mixture reaches 75ºC (170ºF).Remove custard from the heat, and let cool to room temp. Whisk in the Drambuie, Countreau, and lemon extract.Cover and refrigerate until cold.
