Lobiya and pumpkin cooked together with masalasLOBIYA AND PUMPKIN CURRYIngredients1 cup black eyed beans (lobiya), soaked200 gms red pumpkin, cubed3 tbsps oil1 tsp cumin seeds2 dried red chillies, broken¼ tsp asafoetida1 tbsp chopped ginger1 tbsp chopped garlic2 medium potatoes, cubed¼ tsp turmeric powder1 tsp coriander powder½ cup tomato pureeSalt to taste¼ cup fresh coriander leaves1 medium onion, sliced2 green chillies, broken½ tsp garam masala powderMethod1. Heat oil in a pressure cooker. Slice onion.2. Add cumin seeds, dried chillies, onion, asafoetida, ginger and garlic to the cooker and saute till fragrant.3. Add pumpkin, potatoes, black eyed beans, turmeric powder and coriander powder and mix.4. Add 3 cups water and tomato puree and mix. Add salt and mix. 5. Chop coriander leaves and add to the cooker. Add green chillies and garam masala powder and mix. Cover the cooker with lid and cook under pressure till 3 whistles are given out. Let it stand for 10-15 minutes.6.
