Lemon Rice | Sanjeev Kapoor Khazana

Cooked rice tempered with indian spices with prominent flavour of lemon juice. A popular recipe from South India which you must try !

LEMON RICE

Ingredients

3 cups cooked Basmati rice
Juice of ½ lemon
1 tablespoon oil
1 teaspoon mustard seeds
5-6 curry leaves
1 teaspoon split skinless black gram (dhuli urad dal)
1 teaspoon split Bengal gram (chana dal)
1 green chilli, finely chopped
¼ teaspoon asafeotida (hing)
2-3 dried red chillies
5-6 cashewnuts, halved
¼ teaspoon turmeric powder
1 teaspoon ginger-garlic paste
Salt to taste
2 teaspoons chopped fresh coriander leaves
Lemon wedges for garnishing
Fresh coriander leaves for garnishing

Method

1. Heat oil in a non-stick pan. Add mustard seeds and let it splutter. Add curry leaves and when they crackle, add split skinless black gram, split Bengal gram, green chillies, asafoetida and broken dried red chillies and sauté for 30 seconds.
2. Add cashewnuts and sauté till light golden brown. Add turmeric powder and ginger garlic paste and sauté for 30 seconds.
3. Add cooked rice, mix and cook for 1 minute. Add salt and mix. Add lemon juice and mix. Add coriander leaves and mix well.
4. Line a serving platter with banana leaf, put the lemon rice and serve hot garnished with lemon wedges and coriander leaves.
