Lauki ki Kheer
Serves 5-6
Recipe in English:

Ingredients:
-Lauki (Bottle gourd) peeled kg
-Pani (Water) 1 & Cup
-Ghee 2 tbs
-Kaju (Cashew nuts) sliced 2-3 tbs
-Badam (Almonds) peeled & sliced 2-3 tbs
-Kishmish (Raisins) 2-3 tbs
-Laung (Cloves) 2-3
-Elaichi powder (Cardamom powder) 1 tsp
-Doodh (Milk) 1 litre
-Cheeni (Sugar) 1/3 Cup or to taste
-Khoya Cup
-Chandi warq (Edible silver leaf)

Directions:
-Cut bottle gourd into 4 pieces & deseed them then cut 2 pieces into small cubes & set aside for later use.
-Deseed remaining bottle gourd and grate with the help of the grater. Set aside.
-In saucepan add bottle gourd cubes, water and boil for 10-15 minutes or until soft. Then blend with the help of the blender & set aside.
-In pot add ghee and let it melt.
-Add cashew nuts, almonds and fry for 30 seconds.
-Add raisins and fry for 1 minute & set aside for later use.
-In pot add cloves, grated bottle gourd, mix well and cook for 10-12 minutes & keep mixing in between.
-Now add blended bottle gourd, cardamom powder and mix well.
-Add milk, mix well and bring it boil and cook for 4-5 minutes.
-Add sugar, mix well and cook until on low flame for 10-15 minutes and keep mixing in between.
-Now add fried nuts and mix well.
-Turn off the flame. Add khoya and mix.
-Garnish with edible silver leaf, almond & serve chilled!

Ajza:
-Lauki (Bottle gourd) peeled kg
-Pani (Water) 1 & Cup
-Ghee 2 tbs
-Kaju (Cashew nuts) sliced 2-3 tbs
-Badam (Almonds) peeled & sliced 2-3 tbs
-Kishmish (Raisins) 2-3 tbs
-Laung (Cloves) 2-3
-Elaichi powder (Cardamom powder) 1 tsp
-Doodh (Milk) 1 litre
-Cheeni (Sugar) 1/3 Cup or to taste
-Khoya Cup
-Chandi warq (Edible silver leaf)

Directions:
-Lauki ko 4 pieces mein cut ker lein & deseed ker k 2 pieces ko small cubes mein cut ker leinor baad mein use kernay k liye side per rakh dein.
-Baqi lauki ko bhi deseed ker lein aur grater ki madad sa kadukash ker lein. Ab side per rakh dein.
-Saucepan mein lauki k cubes aur pani daal dein aur 10-15 minutes ya naram ho janay tak boil ker lein. Phir blender ki madad sa ache tarha blned ker lein & side per rakh dein.
-Pot mein ghee daal ker melt ker lein.
-Kaju aur badam daal ker 30 seconds tak fry ker lein.
-Kishmish daal ker 1 minute tak fry karein aur baad mein use kernay k liye side per rakh dein.
-Pot mein laung aur kadukash ki hui lauki daal ker ache tarha mix karein. 10-12 minutes tak pakayen. Beach beech mein chamcha chalatay rahein.
-Ab blended lauki aur elaichi powder daal ker ache tarha mix keren.
-Doodh daal ker ache tarha mix karein. Ubal anay ka bad 4-5 minutes k liye paka lein.
-Cheeni daal ker ache tarha mix karein aur halki ancch per 10-15 minutes tak paka lein aur beech beech mein chamcha chalatay rahein.
-Ab fried nuts daal ker ache tarha mix keren.
-Chulha bund ker dein aur khoya daal ker mix karein.
-Chandi warq aur badam se garnish ker k thanda serve karein!
