Lahori hareesa
Ingredients for hareesa:
Rice 1/2 cup
Mung bean 1/2 cup
Crush wheat 3/4 cup
Mutton (boneless) 1/2 kg
Salt to taste
Black pepper 1/2 tbsp
Green chilies (chopped) 1/2 cup
Ginger garlic paste 1 tbsp
Spinach 1/2 kg
Ingredients for kabab:
Mutton mince 500g
Salt to taste
Ginger garlic paste 1/2 tbsp
Green chilies 2 tbsp
Desi ghee 1 cup
Black pepper 1 tbsp
Water as required
Direction for hareesa:
In three different bowls soak rice, mung beans and crushed wheat overnight.
Take a bowl add mince, salt, ginger garlic paste, green chilies and mix it well.
Then make kabab like shapes of shallow fry them until light golden brown. Set aside.
In a pot add one liter water, mutton, salt, green chilies, ginger garlic paste and cook until meat is tender.
Then mash the cooked meat with help of a spatula.
Then in a pot add 2 ½ liter water add rice, mung beans, crushed wheat and boil until tender. Blend it well.
Add cooked meat, water if required mix it well and cook for 10 to 15 minutes. Then add cooked kababs in it.
Directions for tarka:
In a pan of water boil spinach for 10 minutes on medium low flame or until tender.
Strain spinach, add in a grinder and pour 1/4 cup of water and make a fine paste.
In a pan heat desi ghee, add one cup spinach in it and fry it for 5 minutes. Your tarka is ready.
Pour it on top of your hareesa and your dish is ready to serve.
Preparation time: 25 minutes
Cooking time: 1 hour
Serving: 8-10
