Lachaydar baisan paratha a perfect recipe to start your day. #happycookingtoyou #foodfusion #digitalammi #paratha Written Recipe: https://bit.ly/3gYHEB4Recipe in English:Ingredients:Prepare Baisan Mixture:-Baisan (Gram flour) sifted 2 Cups-Lal mirch powder (Red chilli powder) 2 tsp or to taste -Zeera (Cumin seeds) roasted & crushed 1 tsp-Namak (Salt) 1 tsp or to taste-Sabut dhania (Coriander seeds) crushed tbs-Haldi powder (Turmeric powder) tsp-Ajwain (Carom seeds) tsp-Mixed achar (Mixed pickle) 3 tbs-Hara dhania (Fresh coriander) chopped 1 tbs-Ghee (Clarified butter) melted Cup -Water Cup or as requiredPrepare Paratha Dough:-Fine atta (Fine flour) sifted 3 Cups-Namak (Salt) tsp or to taste-Ghee (Clarified butter) 1 & tbs-Water Cup or as required-Cooking oil 1 tsp -Ghee (Clarified butter) -Ghee (Clarified butter) 1 tbs-Makhan (Butter)-Hara dhania (Fresh coriander) chopped Directions:Prepare Baisan Mixture:-In a frying pan,add gram flour & dry roast on low flame until fragrant (4-5 minutes).-In a bowl,add roasted gram flour,red chilli powder,cumin seeds,salt,coriander seeds,turmeric powder,carom seeds,mixed pickle,fresh coriander & mix well.-Add clarified butter & mix well.-Gradually add water,mix well until dough is formed & set aside.-If the mixture becomes too hard,add 1-2 tbs water to adjust consistency.Prepare Paratha Dough:-In a bowl,add all-purpose flour,salt,clarified butter & mix well until it crumbles.-Gradually add water & knead until dough is formed.-Grease with cooking oil,cover & let it rest for 30 minutes.-Knead dough again until smooth. -Take a small dough (115g) &make a ball,sprinkle dry flour & roll out with the help of rolling pin.-On rolled dough,add & spread prepared baisan mixture (2-3 tbs) with the help of greased hand & roll the dough. -Grease with clarified butter,sprinkle dry flour,twist & roll to make a ball.-Place dough ball on a butter paper,sprinkle dry flour,press gently & roll out with the help of rolling pin.-On heated griddle,place paratha,add clarified butter & cook from both sides until done (makes 7-8).-Garnish with butter,fresh coriander & serve with chutney!Recipe in Urdu:Ajza:Prepare Baisan Mixture:-Baisan (Gram flour) sifted 2 Cups-Lal mirch powder (Red chilli powder) 2 tsp or to taste -Zeera (Cumin seeds) roasted & crushed 1 tsp-Namak (Salt) 1 tsp or to taste-Sabut dhania (Coriander seeds) crushed tbs-Haldi powder (Turmeric powder) tsp-Ajwain (Carom seeds) tsp-Mixed achar (Mixed pickle) 3 tbs-Hara dhania (Fresh coriander) chopped 1 tbs-Ghee (Clarified butter) melted Cup -Water Cup or as requiredPrepare Paratha Dough:-Fine atta (Fine flour) sifted 3 Cups-Namak (Salt) tsp or to taste-Ghee (Clarified butter) 1 & tbs-Water Cup or as required-Cooking oil 1 tsp -Ghee (Clarified butter) -Ghee (Clarified butter) 1 tbs-Makhan (Butter)-Hara dhania (Fresh coriander) chopped Directions:Prepare Baisan Mixture:-Frying pan mein baisan dal dein aur halki ancch per khushbu anay tak dry roast ker lein (4-5 minutes).-Bowl mein roasted baisan,lal mirch powder,zeera,namak,sabut dhania,haldi powder,ajwain,mixed achar aur hara dhania dal ker ache tarhan mix ker lein.-Ghee dal ker ache tarhan mix ker lein.-Thora thora ker ka pani shamil karein aur ghond ker dough tayyar ker lein & side per rakh dein.-Agar mixture ziyada hard ho jaye tou 1-2 tbs pani dal ker consistency ko adjust ker lein.Prepare Paratha Dough:-Bowl mein maida,namak aur ghee dal dein aur crumble ho jaanay tak ache tarhan mix ker lein.-Thora thora ker ka pani shamil karein aur ghond ker dough tayyar ker lein.-Cooking oil sa grease karein aur dhak ker 30 minutes kliya chor dein.-Dough ko smooth hunay tak dubara ghond lein.-Chota dough (115g) lein aur ball bana lein,maida chirak dein aur rolling pin ki madad sa bail lein.-Rolled dough per tayyar baisan mixture (2-3 tbs) dal ker greased hand ki madad sa pheela lein & dough ko roll ker lein.-Ghee sa grease ker lein,maida chirak dein,twist karein aur roll ker ka ball bana lein.-Butter paper per dough ball rakh dein,maida chirak dein,gently press karein aur rolling pin ki madad sa pheela lein.-Garam tawa per paratha rakh dein,ghee dal dein aur paratha ko dono sides sap aka lein (makes 7-8).-Makhan aur hara dhania sa garnish ker lein aur chutney ka saath serve karein!
