KOVALA CURRY

Ingredients

500 grams ash gourd (kovala), peeled and cut into 1 inch pieces
2 green chillies, finely chopped
½ cup scraped fresh coconut
Salt to taste
½ cup sour buttermilk
1 tablespoon oil
3-4 dried red chillies, stemmed
½ teaspoon mustard seeds
8-10 curry leaves

Method

1. Add the ash gourd, green chillies and one cup water in a deep
nonstick pan. Mix and cook for five minutes.
2. Grind the coconut to a fine paste with sufficient water.
3. Add salt to the gourd mixture, mix well. Add the ground
coconut. Cover and cook for two minutes.
4. Add the buttermilk and mix. Cover and cook for two minutes.
5. Heat oil in a small nonstick pan. Add the mustard seeds, once
they start to crackle, add the broken red chillies and curry
leaves.
6. Add the tempering to the gourd curry and cover immediately.
Allow the curry to boil.
7. Serve hot.
