Watch this video and find out how to make Kovala Curry KOVALA CURRYIngredients500 grams ash gourd (kovala), peeled and cut into 1 inch pieces2 green chillies, finely chopped½ cup scraped fresh coconutSalt to taste½ cup sour buttermilk1 tablespoon oil3-4 dried red chillies, stemmed½ teaspoon mustard seeds8-10 curry leavesMethod1. Add the ash gourd, green chillies and one cup water in a deep nonstick pan. Mix and cook for five minutes.2. Grind the coconut to a fine paste with sufficient water.3. Add salt to the gourd mixture, mix well. Add the ground coconut. Cover and cook for two minutes.4. Add the buttermilk and mix. Cover and cook for two minutes.5. Heat oil in a small nonstick pan. Add the mustard seeds, once they start to crackle, add the broken red chillies and curry leaves.6. Add the tempering to the gourd curry and cover immediately. Allow the curry to boil.7.
