A simple and unique kadhi made using kokum petals is is absolutely mouth-watering and delicious.

KOKUM KADHI

Ingredients

8-10 kokum petals
2 tbsps gram flour (besan)
2 tbsps oil
1 tsp cumin seeds
¼ tsp asafoetida (hing)
10-12 curry leaves
1 green chilli, chopped
1 tbsp chopped garlic
Salt to taste
2 tsps chopped jaggery
Chopped fresh coriander leaves for garnish
Steamed rice to serve

Method

1. Soak kokum petals in 1½ cups water for 20 minutes.
2. Strain the soaked kokum petals in a large bowl, add gram flour and mix well.
3. Heat oil in a non-stick deep pan, add cumin seeds and let them change colour. Add asafoetida, curry leaves, green chilli, and garlic and sauté till golden brown.
4. Add the kokum mixture, 1 cup water, salt and jaggery and mix well. Cook till the mixture come to a boil, reduce the heat to low and cook for 6-8 minutes more.
5. Switch the heat off, pour the kokum kadhi into a serving bowl, garnish with coriander leaves and serve hot with steamed rice.
