Kitsune Udon Noodle Recipe

I show you how to make Japanese Kitsune Udon and Udon soup by scratch. Kitsune Udon is one of the popular udon in Japan and famous in the Kansai area. Kitsune means fox in Japanese. You may think about why fox? NO, it's no fox meat in this dish! Abura-age (thin fried tofu) is favorite fox food (old Japanese believe), and that is on the udon noodle, that is why the name came from. I use regular soy sauce, but if you can get "usu kuchi shoyu (light color soy sauce)" and cook aburage, it is look better the abura-age.

Ingredients:
Dashi
Water 1000ml/4C
Katsuobushi 40g/1.4oz
(Bonito flakes/shavings)

Udon Soup
Dashi 600ml/2.5C
Soy Sauce 1.5TBS
Mirin 1TBS
Sugar 1tsp
Salt 1/3tsp

Cook Abura-age
Abura-age 2
Dashi 1C
Soy Sauce 1.5TBS
Sugar 4TBS

Scallion (Chinese onion), or Japanese green onion
