Khichdi is a delicious one-pot healthy meal of rice and lentils. It’s nutritious and light on the tummy. When someone is ill or recovering from illness, then khichdi is often served to him/her. In several regions of India, it is considered one of the first solid foods that babies eat. It’s vegetarian, easy to digest, and wholesome. This can be made in a pressure cooker or an Instant Pot.

Ingredients
Basmati Rice: 1 Cup (Soaked)
Tur dal: 1/4 cup (Soaked)
Moong Dal: 1/4 cup (Soaked)
Masoor dal: 1/4 cup (Soaked)
Onion: 1 Small siized (Chopped)
Tomatoes: 1 (Grated)
Garlic cloves: 6 (Chopped)
Ghee: 1 Tbsp
Ginger: 1 Inch (Finely chopped)
Green Chilli: 2 (Finely chopped)
Red chilli powder: 1/2 tsp
Cumin powder: 1/4 tsp
Garam Masala: 1/4 tsp
Turmeric powder: 1/4 tsp
Curry Leaves: 6
Salt as per Taste
Water: 1 litre

For Tadka:
Ghee: 1 Tbsp
Mustard Seed: 1/2 tsp
Cumin Seed: 1/4 tsp
Dried red chilli: 3
Turmeric powder: A pinch
A pinch of Garam Masala
Lemon juice for garnish (Optional)
