#Eggplant #Poppyseeds #Sesame #Vegetarian #Streetfood #Curry #Baingan #brinzalEggplant Curry with Poppy seeds and Sesame seedsGoes well with Rice, Roti or ParanthaIngredients:2 large Baingan (Eggplant)4 tbsp Poppy Seeds4 tbsp sesame seeds3-4 dry Red Chillies5-6 Garlic cloves1 tsp Turmeric Powder1/4 tsp Cumin seeds (Jeera)1/4 Kalonji seed1 big OnionSalt Oil Coriander leavesPaste Preparation -Add Poppy Seeds, Sesame seeds, dry Chillies, Garlic cloves in a mixer jar and make a fine paste.For curry Preparation -Cut Baingan into big pieces.Marinate Baingan with Turmeric Powder and salt and keep aside for 15-20 minutes.Heat Oil in a pan and fry all marinated Baingan in high flame and remove from pan.Adjust Oil in pan up to 2 tbsp. heat and add Jeera, kalonji and let it crackle. Add 1 dry chilliAdd 1 big size finely chopped onion. Saute for few mins.Add the paste and sauté for few minutes in medium heat.Add haldi, red chilli powder and salt.Cook for few minutes until the oil separates.Add water for curry and let it cook for few mins will closed lid.Add the fried baigan and let it cook for 5 minutes.Garnish with Coriander leaves and its ready to serve.
