Khandvi Easy Rcipe In Hindi | खांडवी | खांडवी बनाने का आसान तरीका | Atima's Kitchen

Khandvi is a Gujrati snack, made with very few ingredients. These can be called desi spring rolls and are relished with tea or soft drinks.

For Khandvi:
½ cup Gram flour (Fine)
1 ½ cup Buttermilk
1 tsp. Ginger Green Chili Paste
1 pinch Asafoetida
½ tsp. Turmeric
Salt to taste

For Tempering:
2 tsp. Refined Oil
1 tsp. Black Mustard
2 nos. Green Chilli
10-12 Curry Leaves

For Garnishing:
1 tbsp. Green Coriander (Chopped)
2 tbsp. Fresh Coconut (Grated)

For Chutney:
1 cup Green Coriander
1 inch Ginger
½ tsp. Cumin
1 tsp. Sugar
½ Lemon
2 Green Chili
Salt to taste

Take a big bowl and add all the ingredients of section “Khandvi”. Add Buttermilk In batches to avoid lumps and make this a smooth runny batter. Heat a pan, add the mixture and cook on low heat, while stirring continuously.
When mixture thickens and you see glaze over mixture (It will take 10-12 minutes), remove from heat. Spread the hot mixture quickly into thin layer over a plain and oiled surface.
Let it cool down. Cut straight strips and sprinkle a little grated coconut. Make rolls carefully with the help of knife or spoon.
Prepare tempering of Mustard Seeds, Green Chili and Curry Leaves and spread over Khandvi rolls.

Garnish with Green Coriander and grated Coconut.
Grind Green Chutney with given ingredients.
Enjoy Khandvi with Chutney

NOTE: I have made my pans induction friendly by putting an iron plate over the cook top. By this method, you can cook in any vessel over induction cook top.
