Khajure ka Laddu
Recipe in English:

Ingredients:
-Khajure (Dates) soft 400g (washed & dried)
-Ghee 1 tbs
-Kaju (Cashew nuts) chopped Cup
-Badam (Almonds) chopped Cup
-Pista (Pistachios) chopped Cup
-Khopra (Desiccated coconut) Cup
-Elaichi powder (Cardamom powder) tsp
-Safed til (Sesame seeds) 1 tbs
-Khoya crumbled 250g
-Water 1 tbs
-Elaichi powder (Cardamom powder) tsp
-Desiccated coconut 1 Cup or as required

Directions:
-Deseed and chop dates with the help of knife & set aside.
-In a wok,add ghee & let it melt.
-Add cashew nuts,almonds,pistachios,desiccated coconut,mix well & cook for a minute.
-Add chopped dates and mix on low flame until well combined.
-Add cardamom powder & mix well.
-Add sesame seeds,mix well & cook on low flame for 1-2 minutes.
-Let it cool.
-In a frying pan,add khoya,water & mix well until melts.
-Add cardamom powder and mix well.
-Let it cool.
-Now take small quantity of date mixture,make a ball and flatten on your palm.
-Take small quantity of khoya & make a small ball.
-Place khoya ball in the center and cover properly with date mixture to make a laddu (approx. 60g).
-Coat laddu with desiccated coconut (makes 11-12).
-Can store in an airtight container for up to 2 months in refrigerator.

Ajza:

-Khajure ko deseed ker ka knife ki madad sa ache tarhan chop ker lein side per rakh dein.
-Karahi mein ghee da ker melt karein.
-Kaju,badam,pista aur khopra dal ker ache tarhan mix karein aur ek minute kliya paka lein.
-Chopped khajure shamil karein aur halki ancch per ache tarhan mix ker lein.
-Elaichi powder dal ker ache tarhan mix karein.
-Safed til dal ker ache tarhan mix karein aur halki ancch per 1-2 minutes kliya paka lein.
-Thanda ker lein.
-Friying pan mein khoya aur pani dal dein aur melt hunay tak ache tarhan mix ker lein.
-Elaichi powder dal ker ache tarhan mix karein.
-Thanda ker lein.
-Ab khajure mixture ki small quantity la ker ball bana lein aur haath ki hateeli per pheela lein.
-Khoya ki small quantity la ker ball bana lein.
-Khoya ki ball ko center mein rakh dein aur khajure mixture sa ache tarhan cover ker ka laddu tayyar ker lein (approx. 60g).
-Laddu ko khopra mein coat ker lein (makes 11-12).
-Airtight box mein rakh ker 2 months tak refrigerator mein store ker saktay han.
